Note: Most rules allow claiming a tile for a Chow only from the previous player (in your case, from Tim). Notice however that most rules also allow claiming any tile from any player, if the tile can be used to complete the hand and declare Out (see the example below).

Claiming a tile for a Pung
  1. Load the game file.
  2. Start by discarding Red Dragon.
  3. Wait until Helen discards Bamboo 3.
  4. Click the Bamboo 3 tile while it appears in the discard slot.
  5. Click the Pung button in the Tile Claimed dialog box.

Claiming a discarded tile for a Kong
  1. Load the game file.
  2. Start by discarding Dot 1.
  3. Wait until Jack discards South Wind.
  4. Click the South Wind  tile while it appears in the discard slot.
  5. Click the Kong button.
After the tiles have been melded, you get a supplement tile from the Dead Wall. Otherwise you could not compose a hand consisting of four sets and a pair.

Note: If the rules interpret both concealed and claimed Kongs as concealed triplets (as the Chinese Classical rules do), the claimed Kongs are melded by turning the fourth tile face down (see below).

Claimed Kong: the fourth tile is turned face down.
